I usually make chicken rice bowls ahead of time. They reheat really well and I can change the sauces so they do not feel like the same meal every day.

Overnight oats with Greek yogurt and some fruit are probably my easiest option. I make a few jars at once and they are ready whenever I need breakfast.

Homemade burrito bowls are another good one. I prep the rice meat beans and vegetables separately so I can build a different bowl each day.

Greek yogurt bowls are great when you do not want to cook. I add fruit oats nuts and sometimes a little peanut butter.
